Peter Michael Winery 2008 5 Liter Les Pavots Bordeaux

The 2008 Les Pavots reveals a deep, layered bouquet of black cherry, licorice, black currant, blueberry pie, and blackberry combined with chocolate, vanilla, coffee, black tea, subtle spicy notes of cloves and cinnamon and its distinctive 'garrigue' touch. The complexity and intense character continue into the finish with a massive mouth feel, lasting impressions on the palate and round, silky tannins. 2008 Les Pavots will benefit from three years of cellaring for near term enjoyment and will age gracefully for two decades or more.

Les Pavots is Peter Michael’s flagship blend of red Bordeaux varietals from our Knights Valley Estate. While the blend varies from vintage to vintage, typically it is two thirds Cabernet Sauvignon with roughly equal parts Cabernet Franc and Merlot and a touch of Petit Verdot. Les Pavots captures an elegant, refined expression of the terroir, embracing the full spectrum of Cabernet family varietal expression with its trademark touch of herbes de provence. The name translates to "The Poppies" and is named after the California poppies that grow wild on our estate and are the inspiration for the winery’s logo.

Peter Michael Winery makes very few 5 Liter bottles. These are only available for charity purposes. And large-format bottles age better due to the more stable environment of a large container. The 5 Liter bottle is etched glass and signed by Nicholas Morlet, Winemaker.

Colgin Cellars 1.5 Liter 2006 IX Estate, Napa Valley Syrah, bottle #48

The Colgin Syrah is vinified from four separate one acre parcels at IX Estate each with its own site specific attributes. All four plots have a different clone and rootstock combination along with soil changes which create four distinctive components. To craft the most complex final blend, we painstakingly ferment and age all lots separately, selecting only the finest lots. Fermentation and maceration resulted in an average vatting time of 34 to 44 days. After 20 months of barrel ageing this Syrah was racked only once in preparation for bottling. The wine was bottled in July 2008 without fining or filtration. Utilizing many old and modern winemaking techniques, we strive to create a Syrah that is varietally correct, site specific and to uphold the Colgin dedication to quality.

Winemaker notes from Allison Tauziet: The 2006 IX Estate Syrah is the most savory Syrah we’ve made to date. Salty aromas of bacon fat, parma ham, soy and white pepper bombard the nose. Sweeter notes of purple fruits, fresh flowers and caramel bring balance to the savory quality of this wine. As brooding as it is, the wine holds a great freshness as well. The wine coats the palate with a beautiful broad entry and layers of silky tannin. Rich aromatics continue to linger for over a minute on the finish. The 2006 Syrah will drink brilliantly near term, and will continue to evolve for 10 or more years.
